On Sunday, March 14 we held our International Cooking Class on Chinese food.
Mrs.Kei Nagaeki, a long time China-born resident in Azuchi held the classes.
The menu included Chinese style pickled cucumbers, Chinese dumplings, stir-fried sea scallops and celery, and a dessert consisting of kikurage mushrooms.
The participants were very surprised to learn how to cook dumplings starting from the preparation of the salt dough. Nevertheless, participants will likely be up to the challenge at home, since the preparation only involved mixing up water, flour and salt. We also took full advantage of the available ingredients by recycling the leftover broth from the pickled cucumbers, and celery leaves which were not used.
Everyone was initially surprised at the kikurage mushroom dessert, nevertheless it is resembles and tastes like a jelly, and it was largely appreciated.
We worried about not being able to finish the large amount of food prepared, but thanks to its balance and tastiness, we ate it all.
It was a good opportunity to host this small international event between a foreign born Azuchi resident and fellow townsmen, food was also great, hence we are thinking of doing this kind of event again in the near future.
